Ingrédients
- 1 medium head cauliflower, chopped
- 3 tablespoons olive oil
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground coriander
- 2 tablespoons tahini
- 2 cloves garlic, minced
- 1/4 cup lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup water
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Spread the chopped cauliflower on a baking sheet and drizzle with 1 tablespoon of olive oil. Toss to coat.
- Roast the cauliflower in the preheated oven for 25-30 minutes, until tender and slightly browned.
- Allow the cauliflower to cool slightly, then transfer to a food processor.
- Add the remaining olive oil, turmeric, cumin, coriander, tahini, garlic, lemon juice, salt, pepper, and water to the food processor.
- Blend until smooth and creamy, adding more water if needed to reach your desired consistency.
- Taste and adjust seasoning if necessary.
- Transfer the hummus to a serving bowl and garnish with chopped parsley.
- Serve with pita bread, veggie sticks, or your favorite dipping items.
