Ingrédients
- 1 cup rolled oats
- 1 cup all-purpose flour
- 3/4 cup brown sugar
- 1/2 cup unsalted butter, melted
- 1/4 teaspoon salt
- 1 teaspoon baking soda
- 2 cups fresh strawberries, diced
- 1 cup fresh rhubarb, diced
- 1/2 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and line a 9x9-inch baking dish with parchment paper.
- In a large bowl, mix together the oats, flour, brown sugar, melted butter, salt, and baking soda until well combined.
- Press about two-thirds of the oat mixture into the prepared baking dish to form the crust.
- In another bowl, combine the diced strawberries, diced rhubarb, granulated sugar, cornstarch, vanilla extract, and lemon juice. Stir until the fruit is evenly coated.
- Spread the fruit mixture evenly over the crust.
- Sprinkle the remaining oat mixture over the fruit layer.
- Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the fruit is bubbling.
- Let the bars cool completely in the baking dish on a wire rack before cutting into squares and serving.
