Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the mashed sweet potato, applesauce, melted coconut oil, maple syrup, and vanilla extract. Stir until well combined.
- In a separate bowl, whisk together the almond flour, oat flour, baking soda, salt, ground cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet ingredients, stirring until a dough forms.

- Using a tablespoon, scoop the dough onto the prepared baking sheet, spacing each cookie an inch apart.
