Raspberry Almond Oat Bars - Vegetarian
The Raspberry Almond Oat Bars are a delightful and nutritious treat perfect for any time of the day. With a base made from rolled oats, almond flour, and coconut, these bars boast a crunchy texture that's beautifully complemented by the sweet and tangy raspberry filling. Ingrédients
- 2 cups rolled oats
- 1 cup almond flour
- 1/2 cup unsweetened shredded coconut
- 1/2 cup sliced almonds
- 1/3 cup honey
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1,5 cups fresh raspberries
- 2 tablespoons chia seeds
Instructions
- Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper.
- In a large bowl, combine the rolled oats, almond flour, shredded coconut, and sliced almonds.
- In another bowl, mix the honey, melted coconut oil, vanilla extract, and salt. Pour the wet mixture into the dry ingredients and stir until everything is well incorporated.
- Press two-thirds of the oat mixture into the bottom of the prepared baking dish to form the crust.
- In a small bowl, mash the fresh raspberries with the chia seeds until it forms a thick, jam-like consistency.
- Spread the raspberry mixture evenly over the crust.
- Sprinkle the remaining oat mixture over the raspberry layer, pressing it down gently.
- Bake for 25-30 minutes, or until the top is golden brown.
- Allow to cool completely in the pan before cutting into bars.
