Passion Fruit Mousse - Vegetarian

Ingrédients
- 6 passion passion fruits, pulp
- 1/2 cup granulated sugar
- 2 tablespoons water
- 3 large egg whites
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Cut the passion fruits in half and scoop out the pulp into a bowl. Set aside.
- In a saucepan over medium heat, combine granulated sugar and water. Stir until sugar dissolves and the mixture starts to boil. Remove from heat and let cool slightly.
- In a clean, dry bowl, beat egg whites until soft peaks form. Gradually add the sugar syrup while continuing to beat until stiff peaks form.
- In another bowl, beat heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Fold the passion fruit pulp into the whipped cream gently.
- Carefully fold the egg whites into the passion fruit mixture until well combined and smooth.
- Spoon the mousse into serving glasses and chill in the refrigerator for at least 2 hours before serving.
