Ingrédients
- 3 large ripe bananas
- 1/2 cup coconut oil, melted
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup almond milk
- 2 cups whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup coconut sugar
- 1 cup fresh blueberries
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan with a bit of coconut oil.
- In a large bowl, mash the bananas until smooth.
- Add in the melted coconut oil, maple syrup, vanilla extract, and almond milk. Mix until well combined.
- In another bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, cinnamon, and coconut sugar.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Gently fold in the fresh blueberries.
- Pour the batter into the greased loaf pan and spread it out evenly.
- Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing and serving.
