Ingrédients
- 2 cups heavy cream
- 3 Earl Earl Grey tea bags
- 1/2 cup granulated sugar
- 6 large egg yolks
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 tablespoon corn starch
Instructions
- In a medium saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and add the Earl Grey tea bags, letting them steep for 10 minutes.
- Remove the tea bags and squeeze out any excess cream back into the saucepan. In a separate bowl, whisk together the sugar, egg yolks, vanilla extract, salt, and corn starch until well combined.
- Slowly add the warm cream into the egg mixture, whisking constantly. Once fully combined, pour the mixture back into the saucepan.
- Cook over medium-low heat, stirring constantly, until the mixture thickens and coats the back of a spoon, about 8-10 minutes. Do not let it boil.
- Pour the custard through a fine-mesh sieve into a bowl to remove any lumps. Cover the surface with plastic wrap to prevent a skin from forming and refrigerate for at least 2 hours before serving.
