Ingrédients
- 1 cup coconut flour
- 1/2 cup almond flour
- 1/4 cup coconut oil, melted
- 1/4 cup honey
- 1/4 cup lime juice
- 1 tablespoon lime zest
- 2 large eggs
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 cups ripe mango, diced
- 2 tablespoons sugar
- 1 tablespoon lemon juice
Instructions
- In a large bowl, combine coconut flour, almond flour, coconut oil, honey, lime juice, lime zest, eggs, vanilla extract, and salt. Mix until well blended.
- Bake for 12-15 minutes, or until the edges are golden brown. Allow the tarts to cool completely before removing from the pan.
- To make the mango coulis, combine diced mango, sugar, and lemon juice in a blender or food processor. Blend until smooth.
- Pour the mango coulis over the cooled tarts and refrigerate for at least an hour before serving.
