Ingrédients
- 1 cup brown rice
- 2 cups water
- 2 cups almond milk
- 1/3 cup maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/4 cup sliced almonds (for topping)
- 1/4 cup raisins (optional)
Instructions
- In a medium saucepan, combine the brown rice and water. Bring to a boil over medium-high heat.
- Reduce the heat to low, cover, and simmer until the rice is tender and the water is absorbed, about 40-45 minutes.
- Add the almond milk, maple syrup, vanilla extract, cinnamon, nutmeg, and salt to the cooked rice.
- Increase the heat to medium and cook, stirring frequently, until the mixture thickens and becomes creamy, about 20 minutes.
- If using, stir in the raisins during the last 5 minutes of cooking.
- Remove from heat and let the pudding cool slightly before serving.
- Serve warm or chilled, topped with sliced almonds.
