Chickpea Shakshuka - Vegetarian

Ingrédients
- 1 tablespoon olive oil
- 1 cup onions, chopped
- 2 cloves cloves garlic, minced
- 1 red red bell pepper, chopped
- 2 cups tomatoes, chopped
- 1 can can (15 oz) chickpeas, drained
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon chili powder
- 4 large large eggs
- Salt to to taste
- Black pepper pepper to taste
- 1/4 cup fresh cilantro, chopped for garnish
Instructions
- Heat olive oil in a skillet over medium heat. Add onions, garlic, and red bell pepper, cooking until softened, about 5 minutes.
- Stir in tomatoes, chickpeas, cumin, paprika, and chili powder. Simmer for 10 minutes until slightly thickened.
- Using a spoon, make four indentations in the tomato mixture. Crack an egg into each indentation.
- Cover the skillet and cook until eggs are just set, about 7-10 minutes.
- Season with salt and black pepper. Garnish with chopped cilantro and serve hot.
