- 2 cups sushi rice
- 2 cups water

- 4 nori nori sheets
- 1 large carrot, julienned
- 1 large cucumber, julienned
- 1 avocado, avocado, sliced
- 1/2 cup red bell pepper, julienned
- 1/2 cup purple cabbage, finely shredded
- 2 tablespoons pickled ginger, thinly sliced
- 1/4 cup soy sauce
- 1 tablespoon fresh ginger, grated
- 1 tablespoon sesame oil
- 1 tablespoon lime juice
- 1 teaspoon honey
Instructions
- Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions.
- In a small saucepan, combine the rice vinegar, sugar, and salt. Cook over medium heat until the sugar and salt dissolve. Let it cool slightly.
- Transfer the cooked sushi rice to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.
- Lay a sheet of nori on a bamboo sushi mat. Spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.
- Arrange the julienned carrot, cucumber, avocado slices, red bell pepper, purple cabbage, and pickled ginger in a line across the rice.
- Roll the sushi tightly using the bamboo mat. Repeat with the remaining ingredients.
- Using a sharp knife, slice each roll into 8 pieces.
- For the dipping sauce, whisk together soy sauce, fresh ginger, sesame oil, lime juice, and honey in a small bowl.
