Marinated Zucchini Bruschetta - Vegetarian

Thinly sliced zucchini is marinated in a flavorful blend of olive oil, balsamic vinegar, garlic, and herbs, then nestled atop creamy ricotta and crunchy toasted baguette slices. Ingrédients
- 2 medium zucchini, thinly sliced
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/4 teaspoon red pepper flakes
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 baguette, baguette, sliced
- 1/2 cup ricotta cheese
- 1/4 cup fresh basil, chopped
Instructions
- In a large bowl, combine the olive oil, balsamic vinegar, garlic, dried oregano, dried basil, red pepper flakes, salt, and black pepper. Whisk until well mixed.
- Add the zucchini slices to the bowl and toss to coat them evenly in the marinade. Cover and let sit for at least 30 minutes.
- Preheat your oven to 400°F (200°C).
- Arrange the baguette slices on a baking sheet and toast in the oven for about 5-7 minutes, or until golden brown.
- Spread a dollop of ricotta cheese on each toasted baguette slice.
- Top with marinated zucchini slices and sprinkle with fresh basil.
- Serve immediately and enjoy!
