Blueberry Yogurt Oat Bars - Vegetarian
The Blueberry Yogurt Oat Bars are a delightful combination of crunchy oats, creamy Greek yogurt, and fresh, juicy blueberries. Ingrédients
- 2 cups rolled oats
- 1 cup almond flour
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup honey
- 1/3 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1 cup plain Greek yogurt
- 1/4 cup honey
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups fresh blueberries
Instructions
- Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
- In a large mixing bowl, combine the rolled oats, almond flour, cinnamon, and salt.
- In another bowl, mix the 1/2 cup honey, melted coconut oil, and 1 teaspoon vanilla extract until well blended.
- Pour the wet ingredients into the dry ingredients and mix until combined.
- Press about two-thirds of the oat mixture into the baking pan to form the base layer.
- Bake the base layer for 10 minutes, then remove from the oven and let it cool slightly.
- In a mixing bowl, combine the Greek yogurt, 1/4 cup honey, egg, and 1 teaspoon vanilla extract.
- Spread the yogurt mixture evenly over the baked oat base layer.
- Sprinkle the fresh blueberries evenly over the yogurt layer.
- Crumble the remaining oat mixture on top of the blueberries.
- Bake for another 25-30 minutes, or until the top is golden brown and the bars are set.
- Allow to cool completely before slicing into squares and serving.
