Strawberry Basil Ice Cream - Low Calorie

Ingrédients
- 2 cups fresh strawberries, hulled and halved
- 1/2 cup fresh basil leaves
- 1 cup granulated sugar
- 1 teaspoon lemon juice
- 2 cups heavy cream
- 1 cup whole milk
- 1 teaspoon vanilla extract
- pinch of of salt
Instructions
- In a blender, combine the strawberries, basil, sugar, and lemon juice. Blend until smooth.
- Pour the mixture through a fine-mesh sieve into a large bowl to remove the seeds and basil bits.
- Stir in the heavy cream, whole milk, vanilla extract, and a pinch of salt until well combined.
- Cover the bowl and refrigerate for at least 2 hours or overnight.
- Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
- Transfer the ice cream to a lidded container and freeze for at least 4 hours or until firm.
- Serve in scoops and garnish with fresh basil leaves and strawberry slices, if desired.
