Mediterranean Farro Salad - Vegetarian
The Mediterranean Farro Salad combines the wholesome goodness of ancient grains with the vibrant flavors of fresh Mediterranean ingredients. Each spoonful brings a delightful mix of textures and tastes, from the chewy farro to the crisp cucumbers and juicy cherry tomatoes, all harmonized by a zesty lemon and garlic dressing.
Ingrédients
- 1 cup farro
- 2 cups water
- 1/2 teaspoon salt
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup Kalamata olives, sliced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh mint, chopped
- 1/4 cup extra virgin olive oil
- 1/4 cup lemon juice
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- 1/4 teaspoon black pepper
Instructions
- Rinse the farro under cold water. In a medium pot, bring 2 cups of water and 1/2 teaspoon of salt to a boil. Add the farro, reduce heat to low, cover, and simmer for about 25-30 minutes, or until the farro is tender. Drain any excess water and let the farro cool to room temperature.
- In a large bowl, combine the cherry tomatoes, cucumber, red bell pepper, red onion, Kalamata olives, feta cheese, parsley, and mint.
- In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, garlic, salt, and black pepper until well combined.
- Add the cooled farro to the large bowl with the vegetables and herbs. Pour the dressing over the salad and toss until all ingredients are evenly coated.
- Serve immediately or refrigerate for a few hours to allow the flavors to meld together.
