- 1 cup cherry tomatoes, halved
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup Kalamata olives, sliced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh mint, chopped
- 1/4 cup extra virgin olive oil
- 1/4 teaspoon black pepper
Rinse the farro under cold water. In a medium pot, bring 2 cups of water and 1/2 teaspoon of salt to a boil. Add the farro, reduce heat to low, cover, and simmer for about 25-30 minutes, or until the farro is tender. Drain any excess water and let the farro cool to room temperature.
In a large bowl, combine the cherry tomatoes, cucumber, red bell pepper, red onion, Kalamata olives, feta cheese, parsley, and mint.
In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, garlic, salt, and black pepper until well combined.
Add the cooled farro to the large bowl with the vegetables and herbs. Pour the dressing over the salad and toss until all ingredients are evenly coated.
Serve immediately or refrigerate for a few hours to allow the flavors to meld together.
