Ingrédients
- 2 cups cooked shredded chicken
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped celery
- 1/4 cup finely chopped parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1/2 cup all-purpose flour
- 1/2 cup chicken broth
- 1/2 cup milk
- 1 tablespoon butter
- 1 large egg
- 1 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
Instructions
- In a large skillet, melt the butter over medium heat. Add the chopped onion and celery, sautéing until softened, about 5 minutes.
- Stir in the flour, continuing to cook for another 1-2 minutes to remove the raw flour taste.
- Gradually whisk in the chicken broth and milk until the mixture is smooth and thickened.
- Add the cooked shredded chicken, parsley, salt, pepper, garlic powder, and paprika. Mix well and cook for an additional 2-3 minutes.
- Remove from heat and let the mixture cool slightly.
- In a shallow bowl, beat the egg. In another bowl, mix the breadcrumbs with the grated Parmesan cheese.
- Form the chicken mixture into small patties or logs, dip each into the beaten egg, then coat with the breadcrumb mixture.
- Heat olive oil in a large skillet over medium-high heat. Fry the croquettes in batches until golden brown and crispy, about 3-4 minutes per side.
- Transfer to a paper towel-lined plate to drain any excess oil. Serve warm with herb aioli or your favorite dipping sauce.
