- 1 cup dried chickpeas, soaked overnight

- 1 teaspoon baking powder

- For the the Tahini Sauce:
- 1/2 cup tahini
- 2 tablespoons lemon juice
- 1/4 cup water
- 1 clove garlic, minced
- 1/4 teaspoon salt
Instructions
- Drain and rinse the soaked chickpeas. Place them in a food processor along with parsley, cilantro, onion, and garlic. Pulse until finely ground.
- Add ground cumin, coriander, baking powder, salt, black pepper, cayenne pepper, and flour. Blend until well combined.
- Form small balls (about 1 inch in diameter) from the mixture and roll them in sesame seeds to coat.
- Heat olive oil in a skillet over medium heat. Fry the falafel balls in batches until golden brown and crispy, about 5 minutes per side.
- For the Tahini Sauce: In a small bowl, whisk together tahini, lemon juice, water, garlic, and salt until smooth and creamy.
