Ingrédients
- 1/4 cup unsalted butter
- 1/4 cup all-purpose flour
- 1/2 cup whole milk
- 1/2 cup chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1 cup cooked ham, finely chopped
- 1/2 cup Gruyère cheese, grated
- 1 tablespoon chopped fresh parsley
- 1/2 cup all-purpose flour (for coating)
- 2 large eggs, beaten

- Vegetable oil oil for frying
Instructions
- In a medium saucepan, melt the butter over medium heat. Add the 1/4 cup of flour and whisk until smooth and light golden, about 2 minutes.
- Gradually whisk in the milk and chicken broth. Cook, whisking constantly, until the mixture thickens and comes to a boil, about 3-5 minutes. Reduce the heat to low and simmer for 2 minutes.
- Stir in the salt and nutmeg.
- Remove the saucepan from the heat and stir in the ham, Gruyère cheese, and parsley until well combined.
- Transfer the mixture to a shallow dish, spreading it evenly, and let it cool completely, then refrigerate for at least 2 hours or until firm.
- Shape the cold mixture into 1-inch logs.
- Place the 1/2 cup of flour, beaten eggs, and breadcrumbs into three separate shallow dishes.
- Dredge each log in flour, dip in beaten eggs, then coat with breadcrumbs.
- Heat about 2 inches of vegetable oil in a large pot to 350°F (175°C). Fry the croquettes in batches until golden brown, about 3-4 minutes on each side.
- Drain on paper towels and serve hot.
