Fresh Cheese Stuffed Tomatoes - Vegetarian
Our Fresh Cheese Stuffed Tomatoes, also known as Summer Bounty Caprese Stuffed Tomatoes, bring the vibrant flavors of the Mediterranean to your table. Juicy tomatoes are hollowed and filled with a delightful mixture of fresh mozzarella cheese, basil, and a hint of balsamic vinegar, then baked to perfection.
Ingrédients
- 4 large tomatoes
- 1 cup fresh mozzarella cheese, cubed
- 1/4 cup fresh basil leaves, chopped
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon pine nuts, toasted
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the tomatoes and scoop out the insides, creating a hollow shell. Set the tomato tops aside.
- In a bowl, mix the fresh mozzarella, basil leaves, olive oil, balsamic vinegar, salt, and black pepper.
- Stuff the hollowed tomatoes with the cheese mixture and place them in a baking dish.
- Drizzle a bit more olive oil over the stuffed tomatoes and sprinkle with toasted pine nuts.
- Place the reserved tomato tops back on each stuffed tomato.
- Bake in the preheated oven for 15 minutes, or until the tomatoes are tender and the cheese is melted.
- Serve warm as a delightful appetizer or side dish.
