Vegetarian Zucchini Fritters - Vegetarian
Our Vegetarian Zucchini Fritters are a crispy and flavorful treat, perfect for any time of year. With fresh zucchini finely grated and combined with a mix of herbs, Parmesan, and breadcrumbs, each bite is a delightful combination of textures and tastes.
Ingrédients
- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup chopped fresh herbs (like parsley or dill)
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup olive oil for frying
Instructions
- Place the grated zucchini in a colander and sprinkle with salt. Let it sit for 10 minutes to draw out excess moisture, then squeeze out as much liquid as possible using a clean kitchen towel.
- In a large mixing bowl, combine the grated zucchini, flour, eggs, breadcrumbs, Parmesan cheese, garlic, herbs, black pepper, and red pepper flakes (if using). Mix well until all ingredients are thoroughly incorporated.
- Heat the olive oil in a large skillet over medium-high heat.
- Spoon about 2 tablespoons of the zucchini mixture into the skillet for each fritter, flattening them slightly with the back of the spoon.
- Cook the fritters for about 3-4 minutes on each side, or until golden brown and crispy.
- Transfer the fritters to a paper towel-lined plate to drain excess oil.
- Serve warm, garnished with additional fresh herbs and a dollop of yogurt or sour cream if desired.
