Caprese Pasta Salad Skewers with Balsamic Reduction are the perfect blend of fresh ingredients and robust Italian flavors. Each skewer, carefully assembled with juicy cherry tomatoes, tender pasta, creamy mozzarella, and fragrant basil leaves, is a mini salad on a stick that bursts with color and taste.
Ingrédients
- 8 ounces ounces cherry tomatoes
- 1 cup cooked pasta (such as penne or fusilli)
- 1/2 cup fresh mozzarella balls (bocconcini)
- 1/2 cup fresh basil leaves
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 2 tablespoons olive oil
- Salt and and pepper to taste

Instructions
- For the balsamic reduction, combine the balsamic vinegar and honey in a small saucepan over medium heat. Bring to a gentle boil, then reduce to a simmer. Cook, stirring occasionally, until the mixture has reduced by half and coats the back of a spoon, about 10-15 minutes. Remove from heat and let cool.
- Cook pasta according to package instructions. Drain, rinse with cold water, and set aside to cool completely.
- Alternately thread cherry tomatoes, pasta, mozzarella balls, and fresh basil leaves onto the skewers.
- Drizzle the skewers with olive oil and season with salt and pepper.
- Just before serving, drizzle the skewers with balsamic reduction. Serve immediately.
