Quinoa and Berry Porridge - Vegetarian
The Quinoa and Berry Porridge perfectly blends the nutty flavor of quinoa with the sweet and tart notes of fresh mixed berries. Enhanced with chia seeds, almond milk, and a hint of vanilla, this breakfast dish offers a delightful combination of textures.
Ingrédients
- 1 cup quinoa
- 2 cups almond milk
- 1 tablespoon honey
- 1 teaspoon vanilla extract
- 1/2 cup mixed berries (blueberries, raspberries, strawberries)
- 1 tablespoon chia seeds
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 tablespoon almond slivers
- 1 tablespoon coconut flakes
Instructions
- Rinse the quinoa thoroughly under cold water using a fine mesh sieve.
- In a medium saucepan, bring the almond milk and salt to a boil over medium heat.
- Add the rinsed quinoa, reduce the heat to low, and simmer, covered, for about 15 minutes or until the quinoa is tender and has absorbed most of the milk.
- Stir in the honey, vanilla extract, cinnamon, and chia seeds, cooking for an additional 5 minutes until thickened.
- Remove from heat and let the porridge sit, covered, for another 5 minutes.
- Gently fold in the mixed berries.
- Serve the porridge warm, topped with almond slivers and coconut flakes.
