Chickpea Flour Crepes - Vegan

Ingrédients
- 1 cup chickpea flour
- 1/2 teaspoon salt
- 1/2 teaspoon turmeric
- 1 teaspoon cumin
- 1/2 teaspoon black pepper
- 1 cup water
- 1/4 cup finely chopped cilantro
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1/2 medium red onion, finely chopped
- 1 medium tomato, finely chopped
- 1/4 cup grated carrot
Instructions
- In a mixing bowl, combine the chickpea flour, salt, turmeric, cumin, and black pepper.
- Gradually add water, whisking continually to form a smooth batter.
- Stir in the chopped cilantro.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Add the minced garlic and chopped red onion, cooking until softened, about 3-4 minutes.
- Add the chopped tomato and grated carrot, cooking for an additional 2-3 minutes until softened.
- Remove the vegetable mixture from the skillet and set aside.
- Wipe out the skillet and add the remaining 1 tablespoon of olive oil.
- Pour 1/4 cup of batter into the skillet, spreading it thinly to form a crepe.
- Cook for 2-3 minutes until the edges begin to lift and the underside is golden. Flip and cook the other side for another 1-2 minutes.
- Repeat with the remaining batter.
- Fill each crepe with a portion of the vegetable mixture and fold or roll to serve.
