Ingrédients
- 8 oz rice noodles
- 1/2 cup peanut butter, creamy
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 teaspoons sriracha
- 1 tablespoon rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1/4 cup hot water
- 2 cups mixed vegetables (bell pepper, carrots, snap peas)
- 2 tablespoons peanuts, chopped
- 2 green green onions, sliced
- 1 tablespoon sesame seeds
Instructions
- Cook the rice noodles according to package instructions. Drain and set aside.
- In a large bowl, whisk together the peanut butter, soy sauce, sesame oil, sriracha, rice vinegar, garlic, ginger, and hot water until smooth.
