- 1 pound pork tenderloin, thinly sliced
- 2 cups broccoli florets
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/4 cup low-sodium soy sauce
- 1 tablespoon cornstarch
- 1/4 cup water
- 1 tablespoon rice vinegar
- 1/2 teaspoon ginger, grated
- 1/4 teaspoon black pepper
- 1 medium red bell pepper, sliced
- 1 medium yellow bell pepper, sliced
- 1 tablespoon sesame oil
- 2 green green onions, chopped
Instructions
- In a small bowl, whisk together the soy sauce, cornstarch, water, and rice vinegar until smooth. Set aside.
- Heat the olive oil in a large skillet or wok over medium-high heat.
- Add the sliced pork and cook until browned and cooked through, about 5-6 minutes. Remove the pork from the skillet and set aside.
- In the same skillet, add the garlic and ginger, cooking until fragrant, about 30 seconds.
- Add the broccoli florets, red bell pepper, and yellow bell pepper to the skillet. Stir-fry until the vegetables are tender-crisp, about 5-6 minutes.
- Return the pork to the skillet, and pour in the soy sauce mixture. Stir to combine and cook until the sauce has thickened, about 2 minutes.
- Drizzle the sesame oil over the stir-fry and toss to coat evenly.
- Garnish with chopped green onions and serve hot.
