Ingrédients
- 2 cups plain Greek yogurt
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 4 large ripe apricots, pitted and chopped
- 1/4 cup sliced almonds
- 1 tablespoon sugar
- 1 tablespoon lemon juice
Instructions
- In a medium bowl, combine the Greek yogurt, honey, and vanilla extract. Mix until smooth and well combined.
- Place the chopped apricots, sugar, and lemon juice in a blender or food processor. Blend until smooth.
- Gently fold the apricot mixture into the yogurt mixture, creating swirls but not fully mixing together to maintain a marbled effect.
- Pour the mixture into a freezer-safe container and freeze for at least 4 hours, or until firm.
- Preheat oven to 350°F (175°C). Spread the sliced almonds on a baking sheet and toast in the oven for 5-7 minutes, until golden brown and fragrant. Allow to cool.
