Vegan Chili Cheese Fries - Vegan

Ingrédients
- 4 large russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup bell peppers, chopped
- 1 cup cooked black beans
- 1 cup cooked kidney beans
- 1 can (15 oz) diced tomatoes
- 2 tablespoons tomato paste
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon black pepper
- 1 cup vegan cheddar cheese
Instructions
- Preheat the oven to 425°F (220°C).
- Cut the potatoes into thin fries and toss them with olive oil, salt, paprika, and garlic powder.
- Spread the fries in a single layer on a baking sheet and bake for 25-30 minutes, turning them halfway through, until golden and crispy.
- In the meantime, heat a tablespoon of olive oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic; sauté until the onion is translucent, about 5 minutes.
- Stir in the bell peppers and cook for another 3 minutes.
- Add the black beans, kidney beans, diced tomatoes, tomato paste, chili powder, cumin, smoked paprika, and black pepper. Mix well.
- Simmer the chili for 15-20 minutes, stirring occasionally.
- Once the fries are baked, place them on a serving platter and top with the vegan chili.
- Sprinkle vegan cheddar cheese on top and place back in the oven for 5 minutes or until the cheese is melty.
