Ingrédients
- 4 6-oz cod fillets
- 2 tablespoons olive oil
- 1 cup cherry tomatoes, halved
- 1 medium zucchini, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 2 cloves garlic, minced
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1 lemon, lemon, juice and zest
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Arrange cod fillets in a single layer on a greased baking dish.
- In a mixing bowl, combine olive oil, cherry tomatoes, zucchini, bell pepper, red onion, garlic, basil, thyme, lemon juice, and zest. Mix well.
- Spoon the vegetable mixture around and over the cod fillets. Season everything with salt and pepper.
- Bake in the preheated oven for 20 minutes, or until the cod is flaky and vegetables are tender.
