2 tablespoons olive oil

1 cup cherry tomatoes, halved

1 medium zucchini, sliced

1 yellow bell pepper, sliced

1 red onion, sliced

2 cloves garlic, minced

1 teaspoon dried basil

1/2 teaspoon dried thyme

1 lemon, lemon, juice and zest

Salt and pepper to taste

Instructions

Preheat the oven to 375°F (190°C).
Arrange cod fillets in a single layer on a greased baking dish.
In a mixing bowl, combine olive oil, cherry tomatoes, zucchini, bell pepper, red onion, garlic, basil, thyme, lemon juice, and zest. Mix well.
Spoon the vegetable mixture around and over the cod fillets. Season everything with salt and pepper.
Bake in the preheated oven for 20 minutes, or until the cod is flaky and vegetables are tender.
