Ingrédients
- 1 pound firm tofu
- 1/2 cup coconut flakes
- 1/2 cup panko breadcrumbs
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1/2 cup coconut milk
- 2 tablespoons soy sauce
- 1/4 cup sweet chili sauce
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Drain the tofu and press it to remove excess moisture. Cut into bite-sized cubes.
- In a shallow bowl, mix the coconut flakes and panko breadcrumbs.
- In another bowl, whisk together the flour, salt, black pepper, paprika, and cayenne pepper.
- Pour the coconut milk into a third bowl and add the soy sauce, stirring to combine.
- Take each tofu cube and first roll it in the flour mixture, then dip in the coconut milk mixture, and finally coat with the coconut-panko mixture.
- Place the coated tofu bites on the prepared baking sheet.
- Bake for 20-25 minutes, turning once halfway through, until golden and crispy.
- Serve hot with sweet chili sauce on the side.
