Beet and Goat Cheese Dip - Vegetarian
The Roasted Beet and Creamy Goat Cheese Dip is a feast for the eyes and the palate. This vibrant dip combines earthy roasted beets with the smooth, tangy creaminess of goat cheese, creating a harmonious blend of flavors and textures that will delight your guests.
Ingrédients
- 2 medium beets, roasted and peeled
- 1/2 cup goat cheese, softened
- 2 tablespoons Greek yogurt
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh chives, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Wrap each beet in aluminum foil and roast in the oven for 45-60 minutes, or until tender. Allow to cool, then peel.
- In a food processor, combine the roasted beets, goat cheese, Greek yogurt, olive oil, garlic, lemon juice, salt, and black pepper. Blend until smooth and creamy.
- Taste and adjust seasoning if needed. Transfer to a serving bowl.
- Sprinkle fresh chives on top as a garnish.
- Serve with an assortment of crackers, bread, or vegetable sticks.
