Ingrédients

  • 1 cup water
  • 1/2 cup butter
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 4 large eggs
  • 2 cups heavy cream
  • 1 cup dark chocolate, chopped
  • 3 tablespoons sugar
  • 1 teaspoon vanilla extract
  • Pinch of of salt (for the chocolate sauce)

Instructions

  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • In a medium saucepan, bring the water, butter, and salt to a boil over medium heat.
  • Reduce the heat to low and add the flour all at once, stirring vigorously until the mixture forms a ball and pulls away from the sides of the pan. Remove from heat.
  • Add the eggs, one at a time, beating well after each addition until the dough is smooth and shiny.
  • Drop tablespoon-sized balls of dough onto the prepared baking sheet, spaced about 2 inches apart.
  • Bake for 20-25 minutes, until the puffs are golden brown and crisp. Remove from the oven and cool on a wire rack.
  • While the profiteroles are baking, prepare the chocolate sauce. In a small saucepan, heat the heavy cream until it just begins to simmer.
  • Remove from the heat and add the chopped dark chocolate, sugar, vanilla extract, and a pinch of salt. Stir until the chocolate is completely melted and the sauce is smooth.
  • To serve, cut the profiteroles in half and fill each with a scoop of vanilla ice cream or whipped cream, if desired. Drizzle generously with hot chocolate sauce.
