Hot Chocolate Profiteroles - Vegetarian

Ingrédients
- 1 cup water
- 1/2 cup butter
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 4 large eggs
- 2 cups heavy cream
- 1 cup dark chocolate, chopped
- 3 tablespoons sugar
- 1 teaspoon vanilla extract
- Pinch of of salt (for the chocolate sauce)
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a medium saucepan, bring the water, butter, and salt to a boil over medium heat.
- Reduce the heat to low and add the flour all at once, stirring vigorously until the mixture forms a ball and pulls away from the sides of the pan. Remove from heat.
- Add the eggs, one at a time, beating well after each addition until the dough is smooth and shiny.
- Drop tablespoon-sized balls of dough onto the prepared baking sheet, spaced about 2 inches apart.
- Bake for 20-25 minutes, until the puffs are golden brown and crisp. Remove from the oven and cool on a wire rack.
- While the profiteroles are baking, prepare the chocolate sauce. In a small saucepan, heat the heavy cream until it just begins to simmer.
- Remove from the heat and add the chopped dark chocolate, sugar, vanilla extract, and a pinch of salt. Stir until the chocolate is completely melted and the sauce is smooth.
- To serve, cut the profiteroles in half and fill each with a scoop of vanilla ice cream or whipped cream, if desired. Drizzle generously with hot chocolate sauce.
