Ingrédients
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup red lentils, rinsed
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 6 cups vegetable broth
- 1 can diced tomatoes (14 oz)
- 4 cups fresh spinach, roughly chopped
- 1 lemon, lemon, zest and juice
- Salt to to taste
- Black pepper pepper to taste
- Fresh cilantro, cilantro, for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and sauté until translucent, about 5 minutes.
- Stir in the garlic and cook until fragrant, about 1 minute.
- Add the red lentils, cumin, coriander, turmeric, and cayenne pepper. Stir to combine.
- Pour in the vegetable broth and canned tomatoes with their juice. Bring to a boil.
- Reduce heat, cover, and simmer for about 20 minutes until the lentils are tender.
- Stir in the spinach and simmer for an additional 5 minutes until wilted.
- Add the lemon zest and juice, and season with salt and black pepper to taste.
- Garnish with fresh cilantro and serve hot.
