Creamy Spinach and Kale Soup with White Beans - Vegetarian

Ingrédients
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups spinach, packed
- 2 cups kale, packed and chopped
- 1 can white beans, drained and rinsed
- 1/2 cup heavy cream
- 1/4 teaspoon ground nutmeg
- 1 teaspoon lemon juice
- Salt to to taste
- Black pepper pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute.
- Pour in the vegetable broth and bring to a boil.
- Add the spinach, kale, and white beans to the pot. Reduce the heat and simmer for about 10 minutes until the greens are tender.
- Return the soup to the pot, stir in the heavy cream, ground nutmeg, lemon juice, salt, and black pepper. Heat through on low for a few more minutes.
- Ladle the soup into bowls and serve warm.
