Vegan Broccoli Cheese Soup with Nutritional Yeast - Vegan

Ingrédients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups broccoli florets
- 2 medium carrots, sliced
- 4 cups vegetable broth
- 1 cup nutritional yeast
- 1 cup unsweetened almond milk
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon turmeric
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons lemon juice
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and garlic, and sauté for 3-4 minutes until the onion is translucent.
- Add the broccoli florets and sliced carrots to the pot, and cook for another 5 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer for 15 minutes, or until the vegetables are tender.
- Once smooth, stir in the nutritional yeast, almond milk, smoked paprika, turmeric, salt, and black pepper. Return the pot to the stove and cook over low heat for another 5 minutes, stirring occasionally.
- Remove from heat and stir in the lemon juice. Adjust seasoning to taste before serving.
