Ingrédients
- 1 1/2 1/2 cups rolled oats
- 1/2 cup almond flour
- 1/4 cup honey
- 1/4 cup coconut oil, melted
- 1/2 teaspoon vanilla extract
- 1/2 cup mixed berries (blueberries, raspberries, strawberries)
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 large egg
- 1/4 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the rolled oats, almond flour, baking powder, baking soda, and salt.
- In another bowl, whisk together the melted coconut oil, honey, vanilla extract, and egg until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Gently fold in the mixed berries and chopped nuts, if using.
- Scoop out tablespoon-sized amounts of dough and place them onto the prepared baking sheet, flattening them slightly.
- Bake for 12-15 minutes, or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
