Our Vegetarian Zucchini Fritters are a crispy and flavorful treat, perfect for any time of year. With fresh zucchini finely grated and combined with a mix of herbs, Parmesan, and breadcrumbs, each bite is a delightful combination of textures and tastes.
Place the grated zucchini in a colander and sprinkle with salt. Let it sit for 10 minutes to draw out excess moisture, then squeeze out as much liquid as possible using a clean kitchen towel.
In a large mixing bowl, combine the grated zucchini, flour, eggs, breadcrumbs, Parmesan cheese, garlic, herbs, black pepper, and red pepper flakes (if using). Mix well until all ingredients are thoroughly incorporated.
Heat the olive oil in a large skillet over medium-high heat.
Spoon about 2 tablespoons of the zucchini mixture into the skillet for each fritter, flattening them slightly with the back of the spoon.
Cook the fritters for about 3-4 minutes on each side, or until golden brown and crispy.
Transfer the fritters to a paper towel-lined plate to drain excess oil.
Serve warm, garnished with additional fresh herbs and a dollop of yogurt or sour cream if desired.
