  • 6 large kiwis, peeled and chopped
  • 1/2 cup lime juice, freshly squeezed
  • 1 cup sugar
  • 1/2 cup water
  • 1 tablespoon lime zest
  • 1/4 teaspoon salt

Instructions
 

  • In a small saucepan, combine the sugar and water. Heat over medium heat until the sugar is completely dissolved, stirring occasionally.
  • Remove the sugar syrup from heat and let it cool to room temperature.
  • In a blender, combine the chopped kiwi, lime juice, lime zest, and salt. Blend until smooth.
  • Gradually add the cooled sugar syrup to the kiwi mixture while blending until fully incorporated.
  • Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions, usually about 20-25 minutes.
  • Transfer the churned sorbet to an airtight container and freeze for at least 2 hours, or until firm.
  • Scoop the sorbet into bowls or cones and serve immediately.
