  • 1 1/2 1/2 cups almond flour
  • 1/4 cup unsalted butter, melted
  • 2 large avocados, ripe
  • 16 oz cream cheese, softened
  • 1/2 cup erythritol
  • 1/4 cup fresh lime juice
  • 1 tablespoon lime zest
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream, whipped

Instructions
 

  • Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan with butter.
  • Combine the almond flour and melted butter in a bowl, then press the mixture firmly into the bottom of the prepared pan to form the crust.
  • Bake the crust for 10 minutes or until lightly golden. Remove from oven and let cool.
  • In a food processor, blend the avocados until smooth. Add the cream cheese, erythritol, lime juice, lime zest, and vanilla extract; blend until creamy and smooth.
  • Gently fold the whipped cream into the avocado mixture until fully combined.
  • Pour the filling over the cooled crust, smoothing the top with a spatula.
  • Refrigerate for at least 4 hours or overnight until set. Garnish with additional lime zest before serving.
