Creamy Cauliflower and Potato Soup with Nutritional Yeast - Vegan

In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.
Add the chopped cauliflower and diced potatoes to the pot. Stir to combine.
Pour in the vegetable broth and bring to a boil. Reduce the heat, cover, and simmer for 20 minutes, or until the vegetables are tender.
Using an immersion blender, puree the soup until smooth. Alternatively, you can transfer the soup in batches to a blender to puree.
Stir in the unsweetened almond milk, nutritional yeast, salt, black pepper, and nutmeg. Simmer for an additional 5 minutes to allow the flavors to combine.
