Creamy Cauliflower and Potato Soup with Nutritional Yeast - Vegan

Ingrédients
- 1 large head of cauliflower, chopped
- 2 medium potatoes, peeled and diced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup unsweetened almond milk
- 1/2 cup nutritional yeast
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1/4 cup fresh parsley, chopped for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.
- Add the chopped cauliflower and diced potatoes to the pot. Stir to combine.
- Pour in the vegetable broth and bring to a boil. Reduce the heat, cover, and simmer for 20 minutes, or until the vegetables are tender.
- Stir in the unsweetened almond milk, nutritional yeast, salt, black pepper, and nutmeg. Simmer for an additional 5 minutes to allow the flavors to combine.
- Taste and adjust seasonings if needed.
- Ladle the soup into bowls and garnish with fresh parsley before serving.
