Instructions
 

  • In a medium saucepan, combine the coconut milk, water, and sugar over medium heat. Stir until the sugar is fully dissolved, about 3-4 minutes.
  • Remove the saucepan from heat and allow the mixture to cool slightly.
  • Add the fresh lime juice, lime zest, and salt to the cooled mixture, stirring to combine.
  • Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions, until it reaches a soft-serve consistency.
  • Transfer the sorbet to a lidded container and freeze for at least 2 hours, or until firm.
  • Serve scoops of Coconut Lime Sorbet topped with toasted shredded coconut.
