Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
In a large
mixing bowl, combine the rolled oats, almond flour, cinnamon, and salt.
In another bowl, mix the 1/2 cup honey, melted coconut oil, and 1 teaspoon vanilla extract until well blended.
Pour the wet ingredients into the dry ingredients and mix until combined.
Press about two-thirds of the oat mixture into the baking pan to form the base layer.
Bake the base layer for 10 minutes, then remove from the oven and let it cool slightly.
In a
mixing bowl, combine the Greek yogurt, 1/4 cup honey, egg, and 1 teaspoon vanilla extract.
Spread the yogurt mixture evenly over the baked oat base layer.
Sprinkle the fresh blueberries evenly over the yogurt layer.
Crumble the remaining oat mixture on top of the blueberries.
Bake for another 25-30 minutes, or until the top is golden brown and the bars are set.
Allow to cool completely before slicing into squares and serving.
