- 200 grams grams soba noodles
- 1 medium cucumber, julienned
- 1 red red bell pepper, julienned
- 2 medium carrots, julienned
- 2 tablespoons sesame seeds
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons green onions, sliced
- 1 tablespoon rice vinegar
- 1 garlic garlic clove, minced
- 1/4 teaspoon red pepper flakes
Cook soba noodles according to package instructions. Drain and rinse with cold water.
