Vegan Creamy Cauliflower and Kale Soup with Nutritional Yeast - Vegan

Ingrédients
- 1 large cauliflower head, chopped
- 3 cups kale, chopped
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 4 cups vegetable broth
- 1 cup unsweetened almond milk
- 1/4 cup nutritional yeast
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1/4 lemon, lemon, juiced
Instructions
- In a large pot, heat the olive oil over medium heat and sauté the diced onion for about 5 minutes, until translucent.
- Add the minced garlic and cook for another 2 minutes until fragrant.
- Add the chopped cauliflower and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, until the cauliflower is tender.
- Return the soup to the pot and stir in the almond milk, nutritional yeast, sea salt, black pepper, and nutmeg. Simmer for another 5 minutes.
- Stir in the chopped kale and cook for another 5 minutes until the kale is wilted and tender.
- Remove from heat and stir in the lemon juice.
- Serve hot and enjoy!
