This charming soup marries the natural sweetness of butternut squash and apples with the aromatic notes of sage, cinnamon, and nutmeg, all swirled together with a touch of soothing coconut milk. Ingrédients
- 1 large butternut squash, peeled and cubed
- 2 medium apples, peeled, cored, and chopped
- 1 tablespoon olive oil
- 1 small small onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon ground sage
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup coconut milk
- Salt and and pepper to taste
- Fresh sage sage leaves for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 5 minutes.
- Add the butternut squash and apples to the pot, stirring to combine with the onion and garlic.
- Pour in the vegetable broth, then add the ground sage, cinnamon, and nutmeg. Stir well and bring to a boil.
- Reduce heat, cover, and simmer for 20-25 minutes, or until the squash and apples are tender.
- Return the pureed soup to the pot. Stir in the coconut milk and season with salt and pepper to taste. Reheat gently if needed.
- Serve hot, garnished with fresh sage leaves if desired.
