Ingrédients
- 2 cans black beans, drained and rinsed
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 large jalapeno, seeded and minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 4 cups vegetable broth
- 1 cup corn kernels
- 1 can diced tomatoes
- 1/4 cup fresh cilantro, chopped
- Juice of of 2 limes
- Salt and and pepper to taste
- Optional toppings: toppings: diced avocado, sour cream, tortilla chips
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until softened and fragrant, about 3-4 minutes.
- Stir in the minced jalapeno, ground cumin, smoked paprika, and chili powder. Cook for an additional 2 minutes to toast the spices.
- Add the black beans, vegetable broth, corn, and diced tomatoes to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in the chopped cilantro and lime juice. Season with salt and pepper to taste.
- Serve hot, topped with diced avocado, sour cream, and tortilla chips if desired.
