Ingrédients
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 2 celery celery stalks, finely chopped
- 3 large carrots, peeled and chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground paprika
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon cayenne pepper
- 1 cup green lentils, rinsed
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 6 cups vegetable broth
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons tomato paste
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 lemon, lemon, sliced into wedges
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, celery, and carrots. Cook until vegetables are softened, about 5-7 minutes.
- Stir in garlic, cumin, paprika, turmeric, cinnamon, ginger, and cayenne pepper. Cook for another minute until fragrant.
- Add lentils, chickpeas, diced tomatoes, vegetable broth, tomato paste, salt, and black pepper. Bring to a boil.
- Reduce heat to low, cover, and simmer for 30-35 minutes or until lentils are tender.
- Stir in chopped parsley and cilantro. Adjust seasoning with salt and pepper to taste.
