Broccoli Cheddar Soup - Vegetarian
Creamy Cheddar Broccoli Delight combines the comforting essence of homemade soup with the rich flavors of sharp cheddar cheese and tender broccoli. Ingrédients
- 4 cups broccoli florets
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups shredded sharp cheddar cheese
- 1 cup half-and-half cream
- 2 tablespoons all-purpose flour
- 1/4 teaspoon nutmeg
- Salt and and pepper to taste
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the broccoli florets and cook for about 4-5 minutes until they are bright green and slightly tender.
- Sprinkle the flour over the vegetables and stir well to coat evenly. Cook for an additional 2 minutes, stirring constantly.
- Gradually add the vegetable broth while stirring and bring the mixture to a simmer. Reduce the heat and let it cook for about 15 minutes, or until the broccoli is tender.
- Using an immersion blender, carefully blend the soup until it reaches your desired consistency.
- Stir in the half-and-half cream and shredded cheddar cheese. Continue to cook over low heat until the cheese is melted and the soup is creamy and smooth.
- Season with nutmeg, salt, and pepper to taste.
- Ladle the soup into bowls and sprinkle each serving with grated Parmesan cheese and chopped fresh parsley.
- Serve hot with crusty bread on the side.
